Productive Sunday

Happy Monday! I hope you all had a great weekend. Sunday was a very productive one for me which was a great change. I feel like Sundays can sometimes become lazy days but I was happy to find my time filled with different activities.

I spent my morning at Target picking up ingredients for dinner and different recipes. I spent a while in the kitchen working on a variety of festive recipes for July 4th that will be going up later this week so be sure to check back in a few days!

While making everything I made some iced tea. I let it steep while I finished the final touches on everything for pictures. Finally it was time for lunch. I heated up some leftovers and touch a much needed break to eat and watch some “Gilmore Girls”.

A couple months ago I saw a recipe on Julie Fagan’s blog. She wrote about a side dish that is perfect for barbecues. Alex’s dad got a smoker for Father’s Day so he had everyone over at the inaugural smoking. I decided to make her brown rice and black bean salad, you may find her original post about it here. It was very simple and included a lot of ingredients that I have on hand. I only needed to pick up three things in order to make it and it was so simple! I will definitely be making it again since everyone thought it was a hit.

Once we got home, I finished typing this post up before getting in bed to read. I started one of the books I picked up from the library and am really enjoying it so far. (I ended up having a hard time falling asleep so I’m now 75% of the way through it)

  1. I LOVE a good black bean dish–thanks for sharing! I also feel like such a rockstar when I’m productive on Sundays–it’s rare, but when it happens, it’s such a good feeling….


    1. You’re welcome Madeline!, I hope you try it out and like it just as much as I did. It’s also really good as leftovers! Productive Sundays are rare for me as well, but I needed it yesterday. I hope you had a great day!
