Who Cares About Running When You Can Bake

Monday started off dark and rainy. It was the type of morning where getting out of bed is infinitely harder because of the weather. Couple that with the fact that my legs were hurting made for a slow morning. Once I was out of bed it went okay. I noticed that as long ad I was continually moving the soreness wasn’t that bad which I’ll consider a win. I had my normal breakfast of scrambled eggs and an oatmeal muffin before heading out the door to work.


Alex worked from home so I didn’t have to go home at lunch to let Bailey out. For the first time in what feels like months, I was able to read. I pulled out the monster of a book called The Fountainhead. It’s a monster because it’s incredibly thick and over 500 pages long. This book is taking me quite a while to read since I don’t have as much time to read anymore. That’s okay though! It’s just the stage of life I’m in right now.


When I got home from work, I saw Alex and Bailey outside and walked with them for a bit. I headed back in and pulled out everything I would need to make banana chocolate chip muffins. Alex requested I make these when his parents gave us some chocolate bunnies on Easter. I chopped up the milk chocolate one and used that as the chocolate chip. Since it was a recipe I got from Alex’s mom, I may have snuck a taste (or seven) of the batter and it was so tasty. Baking because I wanted to felt AMAZING and it was a fun treat for a Monday afternoon.


For dinner, I got oh so fancy and heated up leftover pizza to have. We decided to order more pizza on Sunday than we would actually eat so that we could have the leftovers for dinner last night. I love when we do that haha. It makes dinner 1) so easy 2) so tasty and 3) who doesn’t love pizza? After eating, Alex and I watched an episode of Billions and had a muffin for dessert. They were absolutely delicious! We hung out a bit before heading to bed.

      1. I definitely need to make some to have on hand for breakfast! I struggle with finding a good breakfast that is not only easy but also filling.


  1. baking for the fun is baking is the best time to bake. I find baking very relaxing and an escape for me. maybe that’s why I bake so much. hope you have a great day today


    1. I love baking but I just can’t get around to it as much as I like on weeknights. Weekends are usually when the baking happens. It felt like such a treat to bake last night. Thank you – have a great day 🙂


    1. Chocolate milk sounded SO good after the race Sunday. But the thought of getting out of my warm car to run into a store to buy some sounded awful so I just went home. I was running late so the hot sauce didn’t go on until after the picture. Don’t worry though, the hot sauce was put on the eggs.

  2. After a long run I USED to treat myself to Gatorade, water and an ibuprofen or several, followed by a steam shower, and finally . . an adult beverage.
    Being of a different age now, the steam shower and a nice tall glass of milk works just fine. Maybe a couple Hershey’s dark minis too . . .


    1. If it’s a long run, the day typically ends with a class of wine or cocktail if we go out to dinner that night. It’s all about balance right?!
      My boyfriend always makes fun of me for drinking milk shortly after workouts. I should add in the dark minis though…

  3. I once tried having a pedicure after a half marathon – what a mistake that was! It’s usually a good book and a lazy day for me with lots of stretching and rolling interspersed!


    1. I can’t wait for it to warm up so I can get a pedicure! It’s hard to justify spending the money when it’s still boot weather. Foam rolling was painful yesterday. But painful in the best way possible haha.

      1. The pedicure is going to wait until about July at this point since it’s never going to warm up haha. But I was just telling Alex I’m probably getting a manicure this weekend just because I can 🙂

      2. Oh I’ve done the shellac but never the gel. I wonder if that would work? I just worry about them feeling weird on the end of my fingers.😂


      3. Oh ok- that’s called shellac where I am and that’s what I get when I get a manicure too. Classroom still destroys it too soon, but I enjoy them in the summer:)


  4. I love planning to eat leftovers on Mondays! Usually we grill chicken on the weekends and then eat leftover on Monday. It makes for an easy start to the week!


  5. I know exactly what you mean about having less time to read (or do other leisure things) due to the stage of life you’re in. When we got Mavis, I was overwhelmed to say the least (since we also have two other pets lol) but I promise it gets better and puppies get SO much easier as they get older!! You’ll be back to reading more soon ❤

    1. Girl I was so overwhelmed one day it was horrible! We’re in a better groove now so it’s already getting better. It’s definitely a busy stage of life when a puppy is involved.

      I always bake for fun lol but usually on weekends. It was such a treat to bake on a Monday afternoon!
