Sunday In Pictures Vol. 33

Happy Monday! It’s a tad dreary this morning but I have my fingers crossed the sun will peak through later in the day. I hope you all had a wonderful weekend! Saturday was filled with some shopping and ended with an amazing movie. Sunday had some relaxing in it and ended with dinner with a friend who is moving. Overall it was a good weekend.

In typical Monday fashion around here, I’m sharing my Sunday through pictures. Have a great day πŸ™‚

Sunday started off with some pancakes and bacon for breakfast.

I baked another batch of oatmeal muffins (I tweak this recipe) while listening to the Mamma Mia! soundtrack.

While the muffins cooled, I finished The Hundred Lies of Lizzie Lovett. It would be a good pool read I think since it’s not intense and a cute story.

For lunch, I made a quesadilla with leftover beans and chicken plus some carrots and hummus.

My next book is called The Identicals by Elin Hilderbrand. It’s about identical twins who live on Nantucket and Martha’s Vineyard but don’t speak even though they live so close. I think it’ll be a good summer read!

Bailey and I went on our longest walk to date. She wants everyone to know that tow trucks are a little scary but if you sit down to watch them back up while it beeps, then they aren’t as scary πŸ˜‰

I made a batch of peanut butter chickpea blondies from Joy Food Sunshine. They smelled SO good while they baked.

Then Alex and I headed to Somerville, New Jersey to meet my friend Greg who is moving at the end of the month. We grabbed dinner at an Irish pub (everything was oddly closed along Main St.) but my corned beef sandwich hit the spot!

If You Like Pina Coladas…

Hi friends! I hope your weekend has been a good one so far. We lucked out with the weather yesterday since it didn’t storm like the forecast called for. Well it may have stormed overnight but I didn’t wake up so who knows. Hopefully the humidity has died down a bit because it was killer the past few days.

I woke up nice and early to get in an easy 3 mile run. Boy did my legs need those easy miles. They were feeling it after the 200m sprints I had on Friday. I managed to finish all by 7 and hopped into the shower. It’s crazy how summer running means even easy runs leave you covered in sweat. I wanted to get to the grocery store before it was too crowded so I made a big smoothie for breakfast. In it was some blueberries, strawberries, 1/3 of a banana and cauliflower rice from the freezer plus chia seed, peanut butter, protein powder and enough milk to make it drinkable through a straw.

Once the groceries were all put away, I headed back out to hit up Target and TJ Maxx. I wandered around both stores for a while to browse and see the things that I needed (read as wanted). I actually picked up a few pairs of shorts at TJ Maxx so I’d call it a win. I ended up meeting Alex in Princeton to go to a few stores since he said J. Crew was having a sale. Unfortunately I didn’t get anything there but we did get a Father’s Day Gift so it wasn’t a total bust of an outing!

When we got home, I was getting hungry. I made a deli sandwich and added some carrots and pretzels to my plate. It was oh so tasty. I’ve noticed that most of my weekend lunches are deli meat sandwiches but honestly I don’t even care. It’s good so why not?

Bailey With Long Leash

After lunch we leashed Bailey up to go to the park. Unfortunately we weren’t there very long before it started to rain. It was the weirdest thing! It was just a few drops then nothing for a bit until we could hear the drops on trees a bit away. All of a sudden the largest rain drops came down. Even though she didn’t have a ton of time to run around, it’s the thought that counts right?

Once we got home, I grabbed my book to read. Chelsea Sedoti’sΒ The Hundred Lies of Lizzie LovettΒ is a cute book. I think it would be a good one to read by the beach or pool since it’s not crazy intense or anything but not completely mindless or anything. I’m a little over halfway and curious how it’s going to end.

Alex said how the hot and humid weather was making him want a treat. The treat ended up being a pina colada. We took them outside since the rain had stopped and chatted for a bit. I felt like I was getting bit my mosquitos so after a bit, I headed back inside to continue our conversation.

For dinner, we order Thai food. I got Pad See Lew with chicken, American broccoli, Chinese broccoli, egg in a black soy sauce. It was really good! Alex got beef Pad Thai and really enjoyed his meal as well. When Alex went to pick it up, they had actually messed up my order and someone made something completely differently so they made my correct meal right on the spot. I’m glad they owned up to their mistake to give good customer service.

After dinner we watched Patriot’s Day. This is the movie about the Boston Marathon bombings in 2013. Oh my…this movie was amazing. There were so many times in it that both Alex and I said we could have cried. I actually did cry at one point. The movie was so well made and according to this Boston Globe article, pretty accurate. If you have not seen the movie stop everything and watch it. We headed to bed once the movie ended.

Semi Back To Normal

Hello everyone! To be honest, today feels more like a Monday than a Thursday but I’m all confused on the days over here. That’s what a 4 day weekend turned 5 day weekend does to you I guess. Have a great day πŸ™‚

Scrambled eggs, toast with cream cheese and chia seeds

When I woke up yesterday, my stomach was still feeling a little eh but since I had a good nights sleep (and multiple naps on Tuesday πŸ˜‰ I was up and ready for work. Breakfast was a little all over the place since we were a tad slow moving after not having to be up for work the past few days. Even with a pretty empty fridge, we managed to pull together some toast and eggs to start the day.

I was pleasantly surprised when I got to work and wasn’t overwhelmed with things to do. A big part of that was essentially my whole team took Friday off then Memorial Day so no one was working too much. The morning flew by and then I quickly went home for lunch and to hang out with Bailey before heading back to work a few more hours.

After work, I ended to the grocery store to pick up just a few essentials to tide us over until a bigger trip this weekend. If I had thought ahead, I could have done it all then but oh well. It won’t kill me to go back right? On the drive home I thought about heading out for a run but decided to hold off one more day since my stomach still wasn’t 100% back to normal.

Bailey and I went for a walk after she got fed and the groceries were all put away. I finished unpacking and then pulled out my book to keep reading. Throughout the night I picked it up a few times to read and am so close to finishing. Tomorrow will have a more in depth review but I’m a big fan ofΒ The Wife Between Us.

Shredded Chicken Burrito Bowl

Alex got home from work and it was time to eat. I had everything heated up and ready to go so we could eat shortly after he got home. Shredded chicken burrito bowls hit the spot and involved minimal cooking which is always a plus. The chicken was the dinner we were supposed to have before we left for Chicago but decided to throw it in the freezer for when we got back home. One of the better decisions we’ve made for sure. I filled my bowl with brown rice, chicken, black beans, cheese, lettuce, salsa and a little sour cream. It was so tasty.

We watched an episode of the office before a certain furry family member reminded us that she had some more energy to get rid of. After leashing Bailey up we headed to the tennis courts to play a few rounds of fetch. One of the young kids in our complex was walking by and ran up to the gate to say “Hi Bailey” before quickly telling us he had to go home. It was adorable and Bailey LOVES all the friends she has in the complex.

After we got home, we finished our episode of The Office then headed off the bed.

Question of the day: Do you find that getting back to a normal routine after a few days off takes a while?

Memorial Day Weekend 2018

Hi friends!! I’m so sorry to have disappeared the past few days. I was soaking up family time and blogging took a back seat. Unfortunately I got some sort of stomach bug on Monday so my plan to have a recap up on Tuesday got thrown out the window. I’m back now so let’s dive right into the weekend. Have a great day πŸ™‚

Friday

Alex, Bailey and I were up bright and early on Friday to finish the rest of our drive. We ended up deciding to break up the drive to my parent’s house and were staying about halfway there in Poland, Ohio. We found a pet friendly hotel on bringfido.com which made it much easier to do since we knew Bailey would be welcomed.

Once we were dressed and ready, we headed to a Dunkin Donuts for some breakfast before hitting the road. We made pretty good time and ended up arriving around lunch time. It was just my little brother, Brendan, and my dad that were home so after they met Bailey and we chatted for a bit we headed out to lunch. We went to Pazzi di Pizza, a local Italian restaurant in my hometown of Elmhurst that has a great lunch menu. I got the chicken vesuvio panini which came with a salad too and it hit the spot.

We drove around downtown Elmhurst because Alex is actually working on a potential deal there for work. Small world right?! When we got home, we hung out with Bailey outside. My parents don’t have a fenced in yard so we brought our 30 foot leash with us and tied it to a tree in their backyard. It was fantastic! Bailey could run around without someone being attached to her at all times and we didn’t have to worry about her running away. After being in the car for the morning, she had lots of energy to run out.

My mom got home from work so we all caught up on life before Alex left to go meet a client. Mom and I headed to do a little shopping and I grabbed a new workout tank and capris thanks to a Dick’s gift card that I had. Let’s be real, who doesn’t loving buying something and feeling like you don’t have to spend money because of a gift card.

We headed home and my older brother Brian had arrived from Michigan. Alex finished up with his meeting and when we got back, Dad had started dinner. He grilled brussel sprouts, romaine lettuce and steak to enjoy. All of it was so tasty!

Alex and I ended up taking a “Bruber” (Brendan Uber) to go meet my friends in a nearby town for the night. It was so much fun to meet up with them and catch up. We started at a bar with a country cover band who was fun before heading to a semi outdoor bar. Our Bruber picked us up and we both collapsed into bed once we got back to my parents.

Saturday

I had every intention of going for a run when I woke up on Saturday but that didn’t happen. Instead I read a bit outside with Bailey before heading for a mani/pedi with my mom. It was nice to be able to sit and relax while talking to her after spending the past two days in the car. Luckily my mom called ahead for appointments because they place was packed! We joked that it was everyone who had stayed in town for the long weekend. After our nails were done, we went to a few local stores to shop around.

The rest of the day was spent hanging out with the family. My dad went to a meat warehouse and brought Bailey back a bone to chew on. Man did she LOVE that bone. We could have left her for hours and she would not have even noticed she was alone. I mean look at how she’s looking at the bone…that is true love.

For lunch, we picked up some Mexican food from a place that has quickly become my family’s go to for catering. Seriously this stuff is legit and so tasty. This is probably bad but I don’t really remember what we did the rest of the afternoon. I think I napped for a bit though.

For dinner, my dad fired up the grill again. This time he made a beef tenderloin, corn and something else. The rest of the evening was spent hanging out with my family.

Sunday

Sunday started off on a great note with a big breakfast. Growing up, my dad would pick a few Sundays and make a big breakfast with bacon, eggs and hash browns. Since most of the kids were home (my sister is studying abroad in Australia so she was the only one missing) he decided to make one for us. Scrambled eggs, two kinds of bacon and hash browns were perfect to start the day.

My mom and I last minute decided to go see Life of the Party. We both give it two thumbs up! It was funny but not crude and every funny part wasn’t in the trailer which I appreciated. If you’re looking for a good movie, you should check this one out.

When we got home, it was time to get ready for the party. I had two cousins graduate from high school last week and one of them was having a party during the afternoon. It was actually most of the reason we went to visit Chicago. After saying hello to everyone I grabbed a new to me beer to try. Goose Island is a Chicago brewery and I was really intrigued to see. Goose Summer Hours lager was similar to Summer Shandy but not as light. If you see it, you should pick it up.

My aunt and uncle had the party catered and went with Portillo’s and got Italian beef. I packed my bun with it and filled my plate with fruit salad and Caesar salad to round out the meal. Man do I miss Italian beef here in New Jersey. If you are ever in Chicago you must try this sandwich out!

After eating, I went outside to sit outside and talk with the rest of the family. Once the mosquitoes started to bite, I headed back inside to help my aunt bring the dessert out. Oh man…it all looked so good! The sunflower cookies were delicious and I definitely brought one home with me. Once we got back to my parents, we packed up as much as we could before heading to bed.

Monday

We got up nice and early to head out on the road. I’m not sure who was more upset to leave because Dad and Bailey had a great bond going. The running joke is he’s going to show up at home now with a puppy.

We were making great time and had every intention of making it all the way back to New Jersey. Then that got thrown out the window. Somehow I caught a stomach bug and we had to stop in Pittsburgh for the night so I could rest a bit. Once again Bring Fido came in handy so we could find a pet friendly hotel to stop at for the night. After checking in I crawled into bed and slept on and off for a few hours before attempting to eat a bit and slept the night away.

Tuesday

Luckily both my boss and Alex’s bosses were incredibly understanding when we both had to call out. After a late start we ended up making it back to New Jersey with no issues. I still had some stomach pain (actually I still do) but we didn’t have to make any emergency stops which was a good sign. Alex did a few work calls on the road (thank you Bluetooh!) and I fell asleep a few times on the ride. When we got back, we unloaded to car and just collapsed on the couch happy to be back.

Sunday In Pictures Vol. 32

Hi! How was your weekend? I have to say mine was pretty good. It was gross Saturday but the sun was out on Sunday and the humidity wasn’t that terrible. I have something fun planned at the end of this post so be sure to read it all. Have a great Monday πŸ™‚

I started off Sunday by reading in bed.

Bailey Pancake

For breakfast, Alex, Tory (Alex’s twin) and I had some pancakes. There was a little batter left so Bailey got a tiny puppy pancake.

When we dropped Tory off back at their parents house, we took Bailey to run around for a bit. She was in love with it.

Donation Bag

After we got home, I rounded up two huge bags of things to donate. I had gone through a few drawers and had things to get rid of. There was an even bigger bag full of stuff I had already loaded into my car.

For lunch, I made a ham sandwich and munched on carrots, pretzels and hummus.

We bought a 30 foot leash for Bailey and headed to the park to test it out.

I ran to Trader Joe’s to pick up a few staples and grabbed a few new to me items.

Buffalo Cauliflower and Homemade Fries

For dinner, I made buffalo cauliflower (recipe will be up Wednesday) and homemade fries.

After dinner, I grabbed my Nook to finish the book. 5 star and would definitely recommend it.
