Bacon, A Wrap And Pesto

Happy Saturday! The forecast calls for thunderstorms today but I have  my fingers crossed it won’t be raining on my run this morning. But who knows haha. Hopefully the sun is shining for you today. Have a great day 🙂

Scrambled Eggs and Bacon

Alex decided to work from home yesterday and we somehow had extra time in the morning. Extra time before work meant that we got to make bacon and eggs for breakfast. Any Friday that starts with bacon means you know it’s going to be a good day.


We ran out of bread the other day so yesterday’s lunch looked a bit different. Instead of my usual peanut butter sandwich, I made a wrap with some deli meat, cheese, lettuce and mustard. I’ve decided that wraps need to make a come back in my life because I love them but haven’t made them at home in forever. The rest of lunch was my usual carrots, pretzels and spicy hummus.


After work, I changed and headed out for a hot and humid run. The workout started off with two faster warm up miles before alternating between 200m at 7:40-7:50 pace and 200m recovery walk for 3 miles. Since it was so hot I was dripping in sweat which means you know it was a good workout! Alex, Bailey and I went on a walk once I had stretched and foam rolled.


Once I took a much needed shower, I kept reading my book. During lunch I started The Hundred Lies of Lizzie Lovett by Chelsea Sedoti. It’s the story of high schooler Hawthorn who becomes fascinated by Lizzie Lovett’s disappearance. Hawthorn thinks it’s the best think to happy to her sleepy town and ends up inserting herself in the investigation. Shortly after Lizzie disappears, Hawthorn comes up with her own theory on what caused the disappearance. It’s a great quick read so far.


For dinner we kept it super simple and just made pesto and tortellini. We watched a bit of The Office after dinner before playing with Bailey. To end the night, we watched the Steve Martin and Martin Short comedy special on Netflix. It was pretty funny and there was no crude humor and almost no swearing which was nice. Definitely worth a watch in my opinion.

Semi Back To Normal

Hello everyone! To be honest, today feels more like a Monday than a Thursday but I’m all confused on the days over here. That’s what a 4 day weekend turned 5 day weekend does to you I guess. Have a great day 🙂

Scrambled eggs, toast with cream cheese and chia seeds

When I woke up yesterday, my stomach was still feeling a little eh but since I had a good nights sleep (and multiple naps on Tuesday 😉 I was up and ready for work. Breakfast was a little all over the place since we were a tad slow moving after not having to be up for work the past few days. Even with a pretty empty fridge, we managed to pull together some toast and eggs to start the day.

I was pleasantly surprised when I got to work and wasn’t overwhelmed with things to do. A big part of that was essentially my whole team took Friday off then Memorial Day so no one was working too much. The morning flew by and then I quickly went home for lunch and to hang out with Bailey before heading back to work a few more hours.

After work, I ended to the grocery store to pick up just a few essentials to tide us over until a bigger trip this weekend. If I had thought ahead, I could have done it all then but oh well. It won’t kill me to go back right? On the drive home I thought about heading out for a run but decided to hold off one more day since my stomach still wasn’t 100% back to normal.


Bailey and I went for a walk after she got fed and the groceries were all put away. I finished unpacking and then pulled out my book to keep reading. Throughout the night I picked it up a few times to read and am so close to finishing. Tomorrow will have a more in depth review but I’m a big fan of The Wife Between Us.

Shredded Chicken Burrito Bowl

Alex got home from work and it was time to eat. I had everything heated up and ready to go so we could eat shortly after he got home. Shredded chicken burrito bowls hit the spot and involved minimal cooking which is always a plus. The chicken was the dinner we were supposed to have before we left for Chicago but decided to throw it in the freezer for when we got back home. One of the better decisions we’ve made for sure. I filled my bowl with brown rice, chicken, black beans, cheese, lettuce, salsa and a little sour cream. It was so tasty.


We watched an episode of the office before a certain furry family member reminded us that she had some more energy to get rid of. After leashing Bailey up we headed to the tennis courts to play a few rounds of fetch. One of the young kids in our complex was walking by and ran up to the gate to say “Hi Bailey” before quickly telling us he had to go home. It was adorable and Bailey LOVES all the friends she has in the complex.

After we got home, we finished our episode of The Office then headed off the bed.

Reading, Reuniting and Running

Hi everyone! Today is my Friday at work since I have the day off tomorrow and my fingers are crossed the day goes by fairly quickly so I can head out. Have a great day 🙂


I woke up and cuddled with Bailey for a little bit before getting ready for work. When I had finished breakfast, I looked at my phone and say Alex had landed woohoo! To say heading to work took will power it definitely did. But you do what you gotta do.


During lunch at work, I busted out my Nook to read. I don’t really know how to describe the plot of this book because I haven’t finished it yet and don’t want to create spoilers. What I will say is I’m really enjoying The Wife Between Us. A brief synopsis that is taken from the book’s description is that you will assume the book is about a jealous ex-wife who finds out her ex-husband is engaged to someone else. If this book is one your to read list, I highly recommend you pick it up.

When I got home from work, Alex and I hung out for a bit and caught up. I heard all about the work conference he had been at while I filled him in on the past few days with Bailey. We leashed Bailey up and went for a walk around our complex since it was pretty nice out.


We had crockpot chicken planned but the more we talked, the more we felt like it made sense to freeze the chicken for next week since we’re leaving town for the weekend and order takeout instead. So a short bit later, we had our cheesesteaks and fries delivered to us. It was quite tasty but man they loaded mine with hot sauce haha. I think it may have been the hottest one because it got to me by the end of the sandwich. Still delicious though!


While I was doing a bunch of stuff after dinner, I started to get stressed. Does anyone else get that way before heading out of town? Even though it was 8 pm, I decided to get dressed for a run and go. The sun was starting to set towards the end of my 3 miles but I felt so good once I got back. Moving my recovery run up a day was just what I needed. 3 miles at a 10:19 pace. Also I promise it was not pitch black when I was running haha. The flash went off on my camera and it made the background black.

Once I was showered and in pjs, I cut myself a brownie and read a bit more. After a few chapters, we decided to head to bed and watch an episode of The Office.

Decent Running Weather

Hi friends! How is your week so far? Mine started off fairly well because it was hot but not boiling or humid which was perfect for my speed workout. Have a great day 🙂


When my alarm went off yesterday morning, I was wide awake and ready to start the day. I absolutely love when that happens and for it to happen on a Monday is even better. For breakfast, I scrambled eggs and had an oatmeal muffin.


After work, I fed Bailey before heading out on my run. Even though it was hot, there was no humidity that I could feel so it made for a pretty great run. Once my mile warmup was complete, I had two 10 minute intervals at 7:50-8:00 pace with a 3 minute walking recovery in between. While hard, the weather didn’t make it impossible which I needed after the last few weeks. I ended the day at just about 4.75 miles which was perfect to start the week off with.


For dinner, I wasn’t that hungry so I grabbed some leftover black beans and put them in a quesadilla. Of course later I was still hungry so I took the two leftover meatballs that we had and heated those up. An interesting combination for sure but what can you do haha. You can’t always have a perfectly in balance meal where each part goes with the other.


I downloaded a new book that is fairly new so I was pretty surprised it was available to borrow on my Nook. The Wife Between Us by Greer Hendricks and Sarah Pekkanen has an interesting summary online. It’s a novel where you assume you are reading about an ex-wife who is jealous of her replacement but you shouldn’t assume anything. Since I was reading in bed, I didn’t get too far into it but based on the prologue I think I’ll really enjoy this one.

Our First Overnight Guest

Hello! How’s your weekend so far? Even though yesterday was fairly grey and it rained most of the day, overall it was pretty good. Right now the sun is shining so I have my fingers crossed it’ll stay out for a while. Have a great day 🙂

On Saturdays, I have an alarm set for 6 am so I can get up an run. Apparently my body was done sleeping at 5:38 am since that’s when I woke up. I laid in bed a bit before deciding to just get up and run. It was raining again so I made sure to grab a hat and I’m so glad I did! For some reason, my watch said my first mile was a 7:58 which made no sense since I don’t think it was even a mile and I definitely wasn’t going that fast. The rest of the run was pretty good despite being wet. I ended up with 4 miles at a 9:09 average pace.


When I got home, I quickly turned on the Royal Wedding coverage to watch while I stretched and foam rolled. What did you guys think of Meghan’s dress? To be honest, I thought it was too simple! Now I know there are most likely rules regarding what they can wearing but Kate’s dress had lace when she married William. While watching, I was texting my mom all of my thoughts because I figured she was watching as well. We chatted back and forth. My baking skills need some work though because did you see the cake? Can you say gorgeous?

Chinese Takeout

For whatever reason, I wasn’t really hungry so I didn’t eat breakfast. It’s not worth it to make yourself eat if you aren’t hungry in my opinion. I ran a few errands before coming home to shower. Since it was raining still, I didn’t want to get dry and warm before heading back out so why not rock the post run look out haha. By the time I was home and showered though I was hungry so leftover Chinese for lunch was perfect.


I spent most of the afternoon reading on the couch. I feel like I’m at this really juicy part in the book now. If you enjoy historical fiction and novels that involve telling two different stories then you need to pick up Cathy Gohlke’s Secrets She Kept.


In the late afternoon, we ended to Alex’s parents house to pick up his twin sister Tory. She was coming to spend the night and is actually the first person we’ve had stay the night since we’ve been in this apartment! When we were driving back, I asked if she wanted to bake and she agreed. Tory picked a brownie recipe out and we got to work. The brownies smelled so good while they cooked and it was hard to not cut into them straight from the oven but we waited until after dinner.

Spaghetti and Meatballs

For dinner, we made spaghetti and meatballs. I use the frozen meatballs from Trader Joe’s and they are so good. I pop them right into the oven while frozen and let them bake for 30 minutes. While those were heating up, I made the noodles for us. In my bowl, I added marinara sauce, some cheese and fresh basil to it. Dinner was so tasty and perfect for a grey day!

After dinner, we all cleaned up and decided to watch a movie. We all decided on the recent Jungle Book movie. While it started, we all had some dessert. They turned out delicious and we all ended up having two. It was pretty good but I felt like little kids would find it kind of scary since the animals are more realistic than a carton. Overall it was good but I can’t compare to the original since I don’t know if I’ve ever seen it. Once the movie was over, we all got ready for bed.
