Our First Overnight Guest

Hello! How’s your weekend so far? Even though yesterday was fairly grey and it rained most of the day, overall it was pretty good. Right now the sun is shining so I have my fingers crossed it’ll stay out for a while. Have a great day πŸ™‚

On Saturdays, I have an alarm set for 6 am so I can get up an run. Apparently my body was done sleeping at 5:38 am since that’s when I woke up. I laid in bed a bit before deciding to just get up and run. It was raining again so I made sure to grab a hat and I’m so glad I did! For some reason, my watch said my first mile was a 7:58 which made no sense since I don’t think it was even a mile and I definitely wasn’t going that fast. The rest of the run was pretty good despite being wet. I ended up with 4 miles at a 9:09 average pace.


When I got home, I quickly turned on the Royal Wedding coverage to watch while I stretched and foam rolled. What did you guys think of Meghan’s dress? To be honest, I thought it was too simple! Now I know there are most likely rules regarding what they can wearing but Kate’s dress had lace when she married William. While watching, I was texting my mom all of my thoughts because I figured she was watching as well. We chatted back and forth. My baking skills need some work though because did you see the cake? Can you say gorgeous?

Chinese Takeout

For whatever reason, I wasn’t really hungry so I didn’t eat breakfast. It’s not worth it to make yourself eat if you aren’t hungry in my opinion. I ran a few errands before coming home to shower. Since it was raining still, I didn’t want to get dry and warm before heading back out so why not rock the post run look out haha. By the time I was home and showered though I was hungry so leftover Chinese for lunch was perfect.


I spent most of the afternoon reading on the couch. I feel like I’m at this really juicy part in the book now. If you enjoy historical fiction and novels that involve telling two different stories then you need to pick up Cathy Gohlke’s Secrets She Kept.


In the late afternoon, we ended to Alex’s parents house to pick up his twin sister Tory. She was coming to spend the night and is actually the first person we’ve had stay the night since we’ve been in this apartment! When we were driving back, I asked if she wanted to bake and she agreed. Tory picked a brownie recipe out and we got to work. The brownies smelled so good while they cooked and it was hard to not cut into them straight from the oven but we waited until after dinner.

Spaghetti and Meatballs

For dinner, we made spaghetti and meatballs. I use the frozen meatballs from Trader Joe’s and they are so good. I pop them right into the oven while frozen and let them bake for 30 minutes. While those were heating up, I made the noodles for us. In my bowl, I added marinara sauce, some cheese and fresh basil to it. Dinner was so tasty and perfect for a grey day!

After dinner, we all cleaned up and decided to watch a movie. We all decided on the recent Jungle Book movie. While it started, we all had some dessert. They turned out delicious and we all ended up having two. It was pretty good but I felt like little kids would find it kind of scary since the animals are more realistic than a carton. Overall it was good but I can’t compare to the original since I don’t know if I’ve ever seen it. Once the movie was over, we all got ready for bed.

Bacon Makes Monday Better

Waking up to a grey sky on Monday morning after going to bed late was rough. Rough as in, I didn’t even get out of bed until 5:40/5:45. Not every morning is a good one and I was slow moving for a while. Alex started breakfast and I walked out to the kitchen to see bacon going into a pan. Bacon and eggs on a Monday morning is a motivator to start the day off on a good note.


At work, I started to get really hungry and was so glad I last minute threw an oatmeal muffin into my bag to have with my fruit as a midmorning snack. The fresh strawberries and muffin were perfect to hold me over until lunch. Luckily the day went by pretty quickly so I could get home.

After work, I said hello to Bailey and quickly changed to head out to run.Β  Right when I started I saw Alex finishing up his run ahead of me. Naturally I decided to try to scare him since he had no clue I was behind him. Let’s just say he was not thrilled at me…don’t worry though he loves me anyways πŸ˜‰ An easy 3 miles and then a little family walk for the day. Not too bad at all! On the walk, we brought a ton of treats along and trained Bailey outside. In our apartment, she’s great at commands but outside is way to distracting. She did a pretty good job once the smell of treats hit her.


When we got home, I got on the couch to read. I decided to stick it out with Ten Thousand Saints since the story is interesting. Plus it’s different from my typical thriller or super easy beach read so I thought it deserved a shot. The story is about two boys, Jude and Teddy, who live in Vermont. Teddy dies of a drug overdose on the last day of 1987 and Jude is left to deal with the aftermath. His relationship with drugs and his parents are sent to extremes. It’s interesting but I can’t decide if it’ll be a book I recommend once I finish. Does that make sense?


For dinner, we had chicken breasts marinating for about 24 hours and threw them on the grill. I branched out when I was at the grocery store over the weekend and bought cauliflower. Cauliflower is a vegetable I enjoy but never go out of my way to purchase. I ended up roasting in the same manner I roast broccoli. Both Alex and I enjoyed it a lot and I think I’ll be picking more up. We also had roasted potatoes to round out the meal.

Once dinner was finished and everything was cleaned up, we settled in on the couch to finish Dunkirk. We started it Saturday night but then someone stopped by so we paused it for another night. Man it got me going this movie! It’s based on actual events in World War II and I know exactly what happens in the end. Christopher Nolan did a phenomenal job writing, directing, and producing the film. I highly recommend if you enjoy historical movies!

When the movie ended, I read a bit before heading to bed. Alex suggested watching an episode of The Office which felt like a great way to round out the night.

Spring Cleaning Day 2

Happy Sunday! I hope you’re having a great weekend so far. Happy Mother’s Day to any mom’s out there. Hopefully you all get to spend the day with people you love and are pampered just like you deserve. Have a great day πŸ™‚


When my alarm went off for my run yesterday morning I heard the rain outside. I desperately just wanted to stay in bed but I told myself that I had to run at least one mile. If the weather got worse or I just wasn’t feeling it after a mile I would come home. The rain was awful! By the end of the first mile my shorts were soaking wet. Soaking as in it felt like I peed my pants. I was so glad I threw on a rain coat before leaving to keep my shirt dry-ish. 5 miles for the day and I was very happy to come home to peel off all my wet layers.


Of course when I got home the rain stopped *eye roll*. I wasn’t going to trust that the rain would hold off so I threw on dry clothes and then drove right to the grocery store to get food for the week. Once everything was unloaded and put away, Alex and I headed out for breakfast sandwiches. He asked if I wanted a roll or bagel so I said surprise me. I got a bacon, egg and cheese with ketchup, hot sauce, salt and pepper on a roll. It was such a tasty breakfast for a rainy day.


When we got home it was time to get back to spring cleaning. This time we tackled the kitchen. I got to work on organizing all of the cabinets. I didn’t realize how much stuff got in them over the past year! After empty each cabinet, the counters were absolutely filled with stuff but I went through and got rid fo old food. All of the cabinets look so much nicer now that they’re cleaned out and organized.


For lunch, I made a ham and cheese sandwich and cut up a bunch of celery to have with hummus. The skies were grey but it wasn’t raining so we decided to take Bailey to the tennis courts to run around. She actually got fetch outside which was good! We’ll throe a ball in the apartment and she’ll play fetch but once we’re outside she’s normally way to distracted. Obviously sniffing every blade of grass near her is much more fun than playing fetch πŸ˜‰

Once we were home from playing outside, we headed back in to tackle the fridge and freezer. It’s crazy what random things you’ll find in the very back of your freezer! We had hot dogs that I honestly forgot that we put in there. Now that it’s cleaned out and organized I think we will be much better at using everything.


Alex met a friend at a driving range to hit some balls so Bailey and I hung out at home for a while. Unfortunately it started to rain so they had to finish early but that just meant I got dinner earlier πŸ˜‰ As an incentive to clean, we decided that we would get Mexican food from a place that recently opened in Princeton. Tacoria actually started at Rutgers in New Brunswick and has expanded to two other colleges in New Jersey. I always get the chorizo nachos and it’s amazing. The chips are covered in black beans, chorizo, cheese, a drizzle of crema (what they call sour cream), pickled jalepenos, and a little salsa.

After dinner, we decided to whip up some fun drinks. Alex had a pina colada and I had a margarita. We bought mixes at Target and for our first try it was pretty good! Our friend ended up coming over for a while and he was pretty impressed with our margarita skills too. It’s fun catching up with him since he grew up 10 houses away from Alex and now lives in New York City. When he left, we watched an episode of The Office before heading to bed.

The First Hot Dog Of Summer

Happy Saturday! It’s going to rain all day but I’m not complaining. First I really hope this rain washes away all the tree pollen causing allergies and secondly it’s actually warm rain instead of freezing rain that we have in winter. I hope it’s much sunnier by you today. Have a great day πŸ™‚

Scrambled eggs, toast with cream cheese and chia seeds

Friday started off pretty good for us. Bailey and I went out before getting ready for the day. I made scrambled eggs and paired it with toast topped with cream cheese and chia seeds. Cream cheese and chia seeds may sounds like a weird combo but trust me and try it.


At work, there was randomly hot dogs and burgers that the building manager grilled. Honestly I have no idea why this happened since we have another barbecue in a few weeks but no complaints here. I opted for a hot dog since I saw one that was fairly charred which is the best in my opinion. Alright I know I’m from Chicago so I shouldn’t put ketchup on a hot dog but I did and I added some mustard too. The rest of my lunch consisted of carrots, pretzels and hummus to keep the balance.


Once I got home from work, I quickly changed and headed out for a run. The workout was 4 x 800m at 5k pace with 400m recovery followed by 4 x 100m strides with 1 minutes rest. It was toasty out there but I got it done. A little over 5 miles to kick off the weekend. When I got home, I was rolling and Alex came back from his run too. Somehow he beat me to the shower so Bailey and I hung out before I rinsed off.


The rest of the night was pretty relaxing! I read a little bit of my new book calledΒ Ten Thousand SaintsΒ by Eleanor Henderson. I’m not positive what I think of it yet but I’ll report back once I’m a little farther int. For dinner, we kept it simple with tortellini and pesto plus some garlic bread on the side. We watched an episode of Billions before taking a family walk to round out the night. After an episode of The Office, I headed off to bed.

Jumping Back Into Running Hard

Hi friends! How was your Monday? I hope it was a good one. Mine felt packed which is always good. Have a great day πŸ™‚


When my alarm went off yesterday morning, it was in the perfect stage of sleep since I felt ready to get up and go. That feeling on a Monday is amazing in my opinion. After getting ready for work and hanging out with Bailey, Alex and I made breakfast. I made scrambled eggs and toast with some peanut butter and chia seeds on it. So delicious!


Work was interesting because it felt like the day flew by until about the last hour and then time moved slow. Once I left, I let Bailey out and got ready for my run. To be honest, I wasn’t sure how the run would go. It was a speed workout (12 x 400m) and I wasn’t sure what my body would think about it. It felt amazing to get out and push myself, even thought it was hot, since I didn’t run at all last week except for 4 moderate miles on Saturday morning. I ended with 8 miles total with a 9:29 average pace.


Alex got home from his run shortly after I had finished foam rolling so we hung out with Bailey and chatted about our day before showering. For dinner, I thre my leftover pasta from Saturday night into the oven. The cream part of the pesto cream sauce almost disappeared because it was basically just pesto on the noodles and chicken but I love pesto so I didn’t mind. I topped it with a little parmesean cheese before digging in.

Once I finished dinner, my Nook was finally charged enough to download a new book. I read about 5 pages of The Girl You Left Behind by Jojo Moyes. The speed workout in the heat seemed to really take it out of me because I fell asleep on the couch around 9. Poor Alex tried to wake me up a few times to get me to move to bed but I kept saying I was too comfortable on the couch. Eventually I did make it into bed though and passed out hard.
